Hey guys keeping it simple today with salad idea…
i try to incorporate at least 1 salad 🥗 a day… its a great way to get the micro nutrients in 💪… today i have some marinated chicken as my protein source and a yoghurt based dressing, recipe below… 🍅 building a sexy colourful 🌈 salad 🥗 is so simple… .
1️⃣ pick a leafy base 🥬… spinach, lettuce, kale etc. .
2️⃣ pick 2-3 more veggies 🍅 🥒🌶, tomatoes, cucumbers, peppers, carrots, zucchini, onion etc. .
3️⃣ pick a protein 🥚🍗 eggs, tofu, chicken, tuna, salmon etc. .
4️⃣ add a dressing olive oil + lemon, vinegar, avocado oil, tahini.
so simple 😍… ∙
today i had. . ∙ spinach . ∙ tomatoes🍅 . ∙ cucumbers 🥒 . ∙ red onion . ∙ marinated chicken b****t (olive oil, salt, black pepper, paprika, chilli powder, garlic powder). i cooked the chicken on the stove top on medium heat for around 8-10 minutes until browned and cooked through. . ∙ greek yoghurt dressing recipe below 👇🏼

. ∙ ½ cup greek yoghurt.
. ∙ 1/2 tbsp wholegrain mustard (dijon). . ∙ 1 stalk of spring onion / shallot.
. ∙ ½ tbsp lemon juice.
. ∙ ½ tbsp olive oil.
. ∙ 1 clove garlic, minced (if you don’t like it too garlicky use ½).
. ∙ pinch of salt & pepper to taste. .

crispy sweet and slightly salty biscuit layer with a light and fresh cream cheese filling topped with a juicy glossy blueberry sauce! yum! match made in heaven! i’ll put the recipe for you guys below!👇

blueberry cheesecake bars
15 digestive biscuits
75 g butter, melted
400 g cream cheese
70 g sugar
100 g crème fraîche
2 tbsp lemon juice
1 tsp vanilla extract
300 g blueberries
2 tbsp sugar
1 tbsp corn starch
1 tbsp lemon juice
preheat oven to 175°c. line a baking tin, 20 cm x 20 cm with parchment paper.
place the biscuits in a food processor and pulse into crumbs. add the melted butter and salt and pulse to combine, it should look like wet sand. press firmly into the bottom of the baking tin. bake in the oven for 8 minutes. remove from the oven and let cool while making the filling.
beat the cream cheese and sugar until smooth and creamy. add the crème fraîche, lemon juice and vanilla extract and beat to fully combine. add the eggs and beat again until just combined. pour on top of the crust and smooth the surface with a spatula or spoon.
bake in the oven for 40 minutes or until the centre is almost set. cool the cheesecake in the tin for an hour, and then in the fridge for atleast 4 hours.
for the blueberry sauce, place all the ingredients in a saucepan over medium heat. bring to simmer and cook until the sauce has thickened to a jam consistency. let cool before pouring over the cheesecake.
refrigerate the cheesecake for atleast 2 hours before cutting into bars and serving.
