My relationship with food suddenly changed when i started both my zero waste and vegan lifestyle. before, breakfast, lunch, and especially dinner were these moments that i just had to get through. later, food became dangerous, something that would harm me if i didn’t regulate it very strictly. i have reached a point where i see food as this precious resource, something that nourishes me and let’s me stay powerful. it is also the fruit of someone’s hard labour, and it must not be wasted. every time we put something on our plate, we choose what people we want to become 🌿🐒 #zerowaste #zerowastefood #zerowastehome #zerowastelife #lesswaste #eco #plasticfree #noplastic #gogreen #natural #plantbased #veganfood #vegan #sustainable #sustainability #bulk #farmersmarket

Before -> after = sunday breakfast 🌿🍳πŸ₯‘πŸžπŸ… - simple combo sourdough 🍞 from my local farmers market. also, i scored two of out three for the poached eggs this morning ☺️ still failing but still practising βœ”οΈ

✨ ingredients:
• 3 organic pasture raised eggs
• large handful of greens (spinach)
• 1/2 tbsp ghee
• 1 tbsp mixed pumpkin and sunflower seeds
• 2 slices of sourdough bread
• handful of cherry tomatoes
• 1/2 avocado

✨ recipe:
1. in a wide deep saucepan like a wok, fill up 3/4 full of water and bring to boil or just add boiled water from the kettle.
2. once boiled, reduce to a simmer. add a splash of apple cider vinegar then swirl with a spoon creating a whirlpool.
3. next c***k one egg at a time into a cup or small bowl. then slowly drop the egg into the whirlpool. repeat with the other eggs with space from each other.
4. cook for about 3-4 minutes. the. use a slotted spoon to drain on paper towel or kitchen cloth.
5. hilarious eggs poaching, in another pan, heat on medium heat - add the ghee.
6. add the spinach to pan to wilt down. takes 2-3 minutes. remove, drain the excess liquid.
7. add the tomatoes back to the pan to cook down for a few minutes too.
8. toast the bread in oven or toaster for 2 minutes until crisp.
9. smash the avocado in bowl with salt and squeeze of lemon juice.
10. then plate up with wilted greens, eggs on top, tomatoes on side and the sourdough topped with avocado πŸ₯‘ and sprinkle of seeds providing the crunch✨

Soaking in the culture and sights of peru. there are houses on the tips and tops of the mountains that just seem insanely impossible. the fruits here are not berries but the sweetest bananas, granadillas, pineapples and watermelon. πŸ₯‘πŸ₯πŸ‰πŸŠπŸŽπŸŒπŸŒ catch some sights on my stories! πŸ“½.we are taking the 360 train tonight to matchu piccu.

An easy low carb dinner to create when short on time. seafood is actually one of the quickest things to cook and the most nutrient dense options going or swimming or hanging about on ropes like mussels 😁

the garlic, onions and chorizo are the key ingredients bringing that flavour and kick πŸ”₯. feel free to use “pasta” over courgette / zucchini noodles.

ingredients:
• bag of mussels from supermarket counter - i used 250 grams worth
• 1 courgette / zucchini
• 3 vine tomatoes
• 1/2 tbsp extra v****n olive oil
• 25 grams good quality chorizo
• 2 garlic cloves
• 1 white onion
• 3 tbsp green olives
• spring onion / scallion

instructions:
1. in the sink or ball. soak the mussels for a few minutes whilst prepping to remove any grit and clean shell.
2. whilst soaking prep vegetables:
dice onion, finely dice garlic, chop tomatoes, slice olives, spiralise courgette, thinly slice spring onion.
3. heat a wide saucepan or wok, with a lid, on medium high.
4. add 1/2 of the oil and onion, allow to@soft for a minute, add the garlic and the chorizo.
5. cook for 3 more minutes until slightly golden.
6. add the chopped tomatoes.
7. then drain the mussels. add the mussels to the pan. give it a shake / stir. put the lid on the mussels. leave cooking for 2 minutes covered.
7. remove lid, give a shake again..
8. in another pan, sauté the zoodles in remaining 1/2 oil cook until softened.
9. remove zoodles transfer to a plate.
10. ladle the mussels on top, followed by olives and spring onion. season with celtic sea salt and serve.

this is a great meal for two but requires a big pan as you need to cook a lot of mussles. additionally, using frozen mussels is good but you do not benefit from the fresh sea juices and also reduces the essential fatty acid nutrients available!
