Shwarma bowl on repeat

it was so delicious that jade requested it again. so here is round two. grilled boneless chicken thighs spiced with my shawarma rub. click save to keep this recipe for later.

shwarma spice blend
1 1/2 tbs cinnamon
1 tbs coriander
2 tsp cardamom
1 tsp ground cloves
1 tbs turmeric
3 tbs cumin
1 tbs smoked paprika
3 tsp ginger
1 tsp cayenne pepper
2 tsp coarse salt
1 tsp black pepper

season the chicken generously at least 2 hours before grilling. save leftover rub for another time. bring the chicken to room temperature. you can use b*****s instead of thighs if you prefer.

preheat grill. brush and oil the grill to clean.
turn the grill to medium heat. add the chicken and grill the thighs for 8 minutes. turn them over and grill for another 8 minutes. check the chicken is cooked through.

i also threw chunks of red pepper, tomatoes, zucchini and onions onto my @allclad griddle and threw them onto the grill while i cooked the chicken.

i served big chucks of these on a bed of romaine lettuce, with cumbers, tzatziki, hummus and some sumac and toasted pita on the side.
