red thai curry soup with mushrooms, tempeh and brown rice ramen noodles by @nutriholist 💛
1 teaspoon coconut or avocado oil⠀
1 shallot (or onion), chopped⠀
2-3 cups shiitake or brown mushrooms, sliced⠀
3 garlic cloves, grated⠀
2-inch piece fresh ginger, grated⠀
2 teaspoons red thai curry paste⠀
1 tablespoon tomato paste⠀
1 large head of broccoli, chopped⠀
1 pack tempeh, cut into 1-inch squares⠀
1 and 1/2 cups coconut milk⠀
1/2 cup water⠀
3-4 tablespoons organic tamari (or soy sauce)⠀
2 packs millet & brown rice ramen noodles (140 g)⠀
toppings (optional): cilantro, lime juice, toasted cashews, sesame seeds⠀
heat oil in a large p*t over medium-low. add chopped shallots (or onions) and mushrooms and saute for about 5-7 minutes until they start to soften⠀
add garlic, ginger, and a small pinch of sea salt, with a splash of water if the pan is dry. mix in the red thai curry paste and tomato paste and stir to combine⠀
add the broccoli stems, tempeh, coconut milk, and water, and bring to a gentle boil over medium-high. then reduce heat to medium-low and let it simmer for about 10 minutes until the sauce thickens a bit. add the broccoli florets 2 minutes before removing the pan from heat⠀
cook ramen noodles according to package instructions and add to the soup. season to taste with tamari (or soy sauce) and serve with fresh lime, cilantro, toasted cashews, and sesame seeds. enjoy!

cauliflower: 1 broken into bite sized pieces
broccoli: 1 broken into bite sized pieces
tikka masala mix: 4 tsp divided
chickpea flour: 2 c
water: 1 3/4 cup
1) preheat oven to 175c
2) mix cauliflower, broccoli, sea salt , 2 tsp tikka masala and olive oil in a bowl.
3) transfer to a lined baking sheet and bake for 15 minutes. allow to completely cool
2) make a smooth thick batter with chickpea flour and water. flavour batter with salt and tikka masala
4) dip cauliflower in batter to evenly coat and transfer to a lined baking sheet (or straight into hot oily to fry)
5) bake for 15-20 minutes till batter is crispy

Spicy gochujang noodles with spinach [email protected] 🔥 a super easy recipe packed with flavour! check out the recipe below:
3 packs of ramen noodle cakes (i use gluten free @lotusfoods )
1 tsp oil
1/3 cup tamari or low sodium soy sauce
2 shallots, thinly sliced
1 bunch of scallions, thinly sliced (1/2 cup reserved)
3 tsp gochujang
4 garlic cloves, minced
1 tbsp fresh ginger, finely grated
5 cups of spinach, roughly chopped
1 tbsp chili oil (optional)
salt pepper to taste .
bring a large p*t of boiling water and cook the noodles according to the package instructions, drain and set aside
while the noodles are cooking, add the oil to a wide skillet and sauté the minced garlic for 10 seconds and then add the sliced shallots, scallions and grated ginger. season with salt and pepper and sauté for 2 minutes until lightly browned
add the gochujang, tamari (or soy sauce) and cook for 2 minutes, stirring constantly.
next, stir in the spinach, add 1/2 cup of water, cover and cook until the leaves are wilted, 3-4 minutes
gently, add the noodles to the skillet, making sure they don’t break, as they go into the pot.
stir well to combine and continue to cook until most of the liquid has been absorbed
serve hot, topped with the reserved scallions and chili oil, if using
