Crispy tandoori potatoes with crispy spiced chickpeas @the_clumsy_vegan. crispy potatoes and chickpeas all in one bowl - yum! 😋
crispy tandoori potatoes
potato: 2 cut in cubes
sweet potatoes: 1 cut in cubes
aquafaba: from can of 1 chickpeas
polenta: 3/4th c
tandoori masala: 2 t
salt to taste
olive oil: 1/2 c
1) pre heat oven to 220c.
2) mix together polenta, tandoori masala and salt in a bowl
3) place aquafaba in another bowl
4) dip potatoes, one piece at a time in aquafaba, then coat with the polenta mix and transfer into a plate
5) when oven is hot pour olive oil in a baking dish and place in oven for 5-7 minutes till hot
6) take the baking dish out of the oven and transfer potatoes into the hot oil. return to the oven and bake for 45 min turning halfway

crispy spice chickpeas: 1) mix together 1 can of drained chickpeas, 1 t olive oil, 2 t chaat masala, 2 t salt. 2) roast at 200c for 45-50 minutes, turning halfway.

🥕😍 deep fried summer rolls! 📷 by @foodpassionical 🚨🚨recipe: 10 pcs spring rolls wrappers
1 small purple cabbage- finely sliced
1 carrot- thinly sliced
20 gm cellophane noodles -soak in hot water for 10 minutes, drain out the water.
50 gm bean sprouts
some crispy garlic
1 tbsp sesame oil
onion salt for taste
coriander for garnish

add in the cooked rice noodles, sesame oil, crispy garlic and onion salt in a big bowl (set aside).
place a spring roll wrap onto a towel and fill it with all the fresh veggies and top some cooked glass noodles. make a sausage like shape out of the fillings at one end of the wrappers. fold sides in and begin rolling the spring roll. at the end of the rolling seal it by moistening the edge with water.
heat the oil over medium-high heat. fry the rolls and ensure turning frequently until the spring rolls turn golden brown. finally serve with any your favourite dipping sauce.

Chickpea curry by @veggie.jam. ✨ so simple and delicious!
for 3 servings:
1 small onion, chopped
2 garlic gloves, minced
1 tsp ginger, minced
1-2 tsp curry powder
1 tsp cumin
1/2 tsp coriander
1/2 tsp salt
pepper to taste
1 can chopped tomatoes
1 tbsp tomato paste
1 can chickpeas
1 can coconut milk
some spinach
sauté onion, garlic and ginger in a large pan for 3-5 min. stir in spices, tomatoes and tomato paste, cook another 5 min. add drained chickpeas, coconut milk and spinach and cook without lid for 10-15 min. serve over brown rice.

if you want more veggies in your meal, then make these bites, you'll 💗it. easy and simple, they are gluten-free and packed with healthy carbs from sweet potatoes and brown rice. .
~ broccoli and cauliflower florets and stems* (about 1lb total) ~ 1 small pack baby carrots
~ 1 small sweet potatoes, baked at 450f for 45 mins until soft and mashed
~ 1 cup cooked brown rice
~ 1 cup rice flour plus more for coating
~ 3 tablespoons tapioca starch
~ 2 teaspoons salt
~ handful of chopped cilantro
~ oil for pan frying
~ thai sweet chili sauce with lime juice
bring a p*t of water to boil, blanch broccoli, cauliflower, and carrots until fully cooked for few minutes. then, drain veggies well and finely chop using a hand pull processor or food processor.
place all chopped veggies in a big bowl, add mashed sweet potatoes, brown rice, salt, flours and mix well. you want to be able to form a patty, if it's too wet, add 2 more tablespoons of rice flour.
form mixture into small patties and refrigerate for 15 minutes. rub more flour to both side of each patty. in a heated pan with 2 tablespoons oil, cook patties until golden brown on each side. serve with thai sweet chili sauce.
*please peel off harder broccoli stems' skin

"happy 🌍day, my insta friends. are you missing my spicy food for the last couple of days?😅 sharing another dumpling post that's steamed and slathered with a 🌶️ black vinegar sauce. it's easy to finish the whole plate like this - yes, me!🙈"
ingredients: (similar to my fried wonton recipe but without walnuts):
~ 2 lbs of bok choy, washed and julienned
~ 1 package of wonton/dumpling wrapper
~ 1 box of firm tofu, drained & mashed
~ 1/4 cup of saute mushrooms
~ 1 tablespoon black bean sauce
~ 1 tablespoon corn starch
~ salt to taste
~ oil
spicy sauce (whisk all ingredients in a bowl until sugar dissolves):
~ 3 tablespoons soy sauce
~ 2 tablespoon chili oil with chili crumbs
~ 1 tablespoon sesame oil
~ 1 teaspoon chinese black vinegar
~ 1 teaspoon grated ginger
~ 1 teaspoon sugar
place julienned bok choy in a large bowl with 2 tsp salt, using your hands, gently massage salt into veggies. set aside for 15-20mins. in a heated pan with 1 tsp oil, sauté mushrooms until lightly brown, add black bean sauce and stir until well combined, set aside and pan fry mashed tofu for 2 minutes (or until brown), season with salt. place both ingredients in a big bowl.
using a cheesecloth or just with your palms, squeeze as much liquid out as possible from your bok choy. add tofu mixture, 🌽 starch, combine well & season if needed.
place a dollop of mixture in the middle of your wrapper, moisten side with water and pleat to seal. place wontons on a steamer basket and steam for 15mins in high heat. remove and serve warm with spicy sauce. you can serve sauce on the side or as pictured. .
