Broccoli & cauliflower bites with thai sweet chili sauce - who wants a share?😋 by @woon.heng

if you want more veggies in your meal, then make these bites, you'll 💗it. easy and simple, they are gluten-free and packed with healthy carbs from sweet potatoes and brown rice. .
~ broccoli and cauliflower florets and stems* (about 1lb total) ~ 1 small pack baby carrots
~ 1 small sweet potatoes, baked at 450f for 45 mins until soft and mashed
~ 1 cup cooked brown rice
~ 1 cup rice flour plus more for coating
~ 3 tablespoons tapioca starch
~ 2 teaspoons salt
~ handful of chopped cilantro
~ oil for pan frying
~ thai sweet chili sauce with lime juice
bring a p*t of water to boil, blanch broccoli, cauliflower, and carrots until fully cooked for few minutes. then, drain veggies well and finely chop using a hand pull processor or food processor.
place all chopped veggies in a big bowl, add mashed sweet potatoes, brown rice, salt, flours and mix well. you want to be able to form a patty, if it's too wet, add 2 more tablespoons of rice flour.
form mixture into small patties and refrigerate for 15 minutes. rub more flour to both side of each patty. in a heated pan with 2 tablespoons oil, cook patties until golden brown on each side. serve with thai sweet chili sauce.
*please peel off harder broccoli stems' skin

Matcha cheesecake with chocolate crust by @365cleaneats 💚
⁣. <recipe 10cm×25cm×h2.5cm (550ml) tart tin>⁣⁣
1/3 cup (45g) rolled oats or gluten free rolled oats⁣⁣
1/4 cup (40g) raw almonds⁣⁣
3 tbsp. coconut sugar⁣⁣
1 tbsp. cocoa powder or cacao powder ⁣⁣
1/8 tsp pink salt⁣⁣
(wet )⁣⁣
2 tbsp. + 1 tsp melted coconut oil⁣⁣
matcha filling⁣⁣
3/4 cup (100g) raw cashews (soaked 4-6 hours and rinsed) ⁣⁣
1/2 cup (120ml) coconut cream⁣⁣
3 tbsp. (30g) melted raw cacao butter ⁣⁣
3-4 tbsp. maple syrup⁣⁣
1 tbsp. lemon juice⁣⁣
2 tsp matcha powder⁣⁣
1/2 tsp lemon zest⁣⁣
pinch of pink salt ⁣⁣
*you can substitute maple syrup & coconut cream with raw agave & raw nut milk for raw filling version.⁣⁣
*bitterness and colour of matcha powder vary. please adjust the amount of the powder according to preference.⁣⁣
method ⁣⁣
1. preheat oven to 170⁰c. place every dry ingredient for the crust in a food processor. process well until it reaches the consistency of flour. ⁣⁣
3. add melted coconut oil into the food processor and process until it becomes like wet sand. ⁣⁣
5. press the mixture against the sides and the bottom of the tart tin. bake it for about 15-20 min or until baked through. after it has cooled down, put it in the freezer for 30 minutes to an hour. ⁣⁣
6. put every ingredient for the matcha filling in a high-speed blender and blend well. layer it over the crust and freeze it until set. ⁣⁣
7. take out the cake from the tin and garnish with fruits.⁣⁣

Choc buckwheat pancakes!! 😍🥞🍫gluten-free, refined sugar-free & oil-free, yet so d**n decadent and delicious 👌🏼
✨full recipe:✨
1️⃣ in a bowl whisk together 1 cup of soy milk, 1 tsp apple cider vinegar, 1 tsp vanilla extract and 1 tbsp maple syrup.
2️⃣ in a separate bowl, add 3/4 cup @thesourcebulkfoods buckwheat flour, 1/4 cup cocoa powder, 2 tsp baking powder, 1/2 tbsp ground flax seeds & a pinch of salt and combine.
3️⃣ add wet mix into the bowl with the dry mixture & stir until you reach a smooth batter.
4️⃣ preheat a non-stick fry pan on medium heat, pour around 1/4 cup batter in to form each pancake and cook on each side for 2-3 minutes.
5️⃣ serve with your favourite toppings and enjoy immediately!
👉 i served mine with fresh strawberries, @purecocobella strawberry coconut yogurt, peanut butter & cacao nibs 🤩🤤🍓🥥

"happy 🌍day, my insta friends. are you missing my spicy food for the last couple of days?😅 sharing another dumpling post that's steamed and slathered with a 🌶️ black vinegar sauce. it's easy to finish the whole plate like this - yes, me!🙈"
ingredients: (similar to my fried wonton recipe but without walnuts):
~ 2 lbs of bok choy, washed and julienned
~ 1 package of wonton/dumpling wrapper
~ 1 box of firm tofu, drained & mashed
~ 1/4 cup of saute mushrooms
~ 1 tablespoon black bean sauce
~ 1 tablespoon corn starch
~ salt to taste
~ oil
spicy sauce (whisk all ingredients in a bowl until sugar dissolves):
~ 3 tablespoons soy sauce
~ 2 tablespoon chili oil with chili crumbs
~ 1 tablespoon sesame oil
~ 1 teaspoon chinese black vinegar
~ 1 teaspoon grated ginger
~ 1 teaspoon sugar
place julienned bok choy in a large bowl with 2 tsp salt, using your hands, gently massage salt into veggies. set aside for 15-20mins. in a heated pan with 1 tsp oil, sauté mushrooms until lightly brown, add black bean sauce and stir until well combined, set aside and pan fry mashed tofu for 2 minutes (or until brown), season with salt. place both ingredients in a big bowl.
using a cheesecloth or just with your palms, squeeze as much liquid out as possible from your bok choy. add tofu mixture, 🌽 starch, combine well & season if needed.
place a dollop of mixture in the middle of your wrapper, moisten side with water and pleat to seal. place wontons on a steamer basket and steam for 15mins in high heat. remove and serve warm with spicy sauce. you can serve sauce on the side or as pictured. .

Chickpea curry by @veggie.jam. ✨ so simple and delicious!
for 3 servings:
1 small onion, chopped
2 garlic gloves, minced
1 tsp ginger, minced
1-2 tsp curry powder
1 tsp cumin
1/2 tsp coriander
1/2 tsp salt
pepper to taste
1 can chopped tomatoes
1 tbsp tomato paste
1 can chickpeas
1 can coconut milk
some spinach
sauté onion, garlic and ginger in a large pan for 3-5 min. stir in spices, tomatoes and tomato paste, cook another 5 min. add drained chickpeas, coconut milk and spinach and cook without lid for 10-15 min. serve over brown rice.

Vegan “beefy” skillet lasagna by @vegantraveleats 🧡

serves 2 very hungry people, or 4 mildly hungry people accompanied by a side


10 oz vegan beefy crumble
1 clove garlic, minced
½ cup unsweetened plain vegan milk (i used oat milk)
2 cups marinara
8 oz lasagna noodles broken into 1 ½ inch pieces, each noodle should be broken into about 5 pieces
1 tbs nutritional yeast
1 cup water
an overflowing ½ cup vegan mozzarella
a large handful of chopped spinach
grated vegan parmesan cheese
½ tsp salt
fresh cracked black pepper
