"(completely vegan!) just five ingredients to make this sauce and it was so worth it. made this pasta last night to go along with our grill session. you could use any tomato sauce, but i used @otamotfoods sauce, which is seriously the best jarred pasta sauce i’ve had. honestly, i am not always the biggest jarred tomato sauce fan. i’d much rather make my own...however, this one is made with with over ten veggies including tomatoes, carrots, peppers, beets, spinach and mushroom. so it is full of vitamins, the texture is creamy and the taste is so balanced. even the kids loved it!"
deets: sauce: 1 cup @otamotfoods essential sauce, 3 tablespoons almond milk yogurt, 1/2 teaspoon salt, 1 teaspoon garlic powder and 1 tablespoon hot sauce (or more). heat the ingredients in a sauce pan and mix well to combine. pour over pasta! i used gluten free rigatoni and tossed with sautéed kale (sautéed in olive oil with some garlic and lemon) and roasted tomatoes, this delicious sauce, and topped with fresh basil and dairy free feta balls. •

Creamy basil garlic mushroom pasta by @free_athlete 🌱 a wholesome dinner that is bursting with flavour!
125g (4oz) mushrooms, brown⠀
125 ml (4oz) vegetable broth ⠀
125 ml (4oz) soy cuisine (soy cream or coconut cream) ⠀
1 onion ⠀
120g (4oz) pasta ⠀
30ml (1oz, 1t) white wine ⠀
1 tsp olive oil ⠀
1/2 teaspoon agave syrup ⠀
1/2 cloves of garlic⠀
1. slice the mushrooms. finely chop the onion and garlic. ⠀
2. heat the olive oil in a medium-sized pan. put the onions in the pan and fry until they are glassy. ⠀
3. add the garlic and mushrooms and sauté until the mushrooms are golden brown.⠀
4. add the agave syrup and caramelise for 1-2 minutes. ⠀
5. deglaze with wine and vegetable stock and simmer. ⠀
6. chop the rosemary and add to the pan. ⠀
7. cook the pasta according to the packing instructions. ⠀
8. add soy cuisine to the pan and simmer until the sauce is creamy. ⠀
9. if you want, you can also add 1-2 tablespoons of the pasta water to the pan to bind the sauce. enjoy!

4 oz. white button mushrooms, diced (+/- to taste)⠀
4 oz. baby bella (cremini) mushrooms, sliced (+/- to taste)⠀
2 teaspoons tamari⠀
1 medium yellow onion, fine dice⠀
2 tablespoons finely minced garlic (about 8 to 10 cloves)⠀
2 tablespoons tomato paste⠀
½ cup vegetable broth⠀
2 cups water⠀
1 to 2 teaspoons organic maple syrup (+/- to taste)⠀
2 tablespoon unsweetened plain plant milk⠀
1 tablespoon miso⠀
½ teaspoon garlic powder⠀
½ teaspoon onion powder⠀
2 tablespoons dried minced onion flakes⠀
1 teaspoon dried parsley⠀
1 teaspoon dried basil⠀
½ teaspoon dried oregano⠀
¼ teaspoon crushed red pepper flake⠀
1 teaspoons sea salt (+/-)⠀
¼ teaspoon black pepper (+/-)⠀
1 teaspoon dulse granules (optional)⠀
1 – 1b. linguini (regular or gluten free) cooked

aaah italian food 🙃 this pasta is so summery, refreshing and super yum!☀️
as always, the recipe is plant-based and healthy. feel free to use any kind of pasta!
350g cauliflower florets
120ml 1/2 cup water
60g / 1/2 cup cashews, saoaked overnight
1 organic lemon, juice and zest
1 tsp sea salt
1/2 garlic clove
3 tbsp extra v****n olive oil
1 tbsp extra v****n olive oil
1 tbsp dried oregano
2 tbsp bread crumbs
1/2 tsp chili flakes
black pepper, ground
1 tbsp pine nuts
1/2 organic lemon, zest
cook the cauliflower in a steamer or in boiling water. drain. place in a food processor with the water and blend until creamy.
add the cashews, lemon juice and zest, salt, garlic, extra v****n olive oil. blend until completely smooth. place the sauce in a large bowl.
heat 1 tbsp extra v****n olive oil in a small saucepan. add the bread crumbs, oregano, salt, pine nuts and chili flakes and cook until crispy and golden.
cook the linguine following the package instructions.
drain the linguine and keep 1 tbsp of cooking water.
add the pasta to the sauce bowl together with the cooking water and toss until well coated.
serve immediately with the bread crumbs and some lemon zest.
Wholewheat pasta + spinach in a rich tomato + chickpea + red onion sauce (with smoked paprika, balsamic vinegar, bay leaves and garlic) for foooood at work with lots of bbq sauce and post pic nooch😛🍝🍅🌱 can’t remember the last time i actually had a warm bowl of pasta rather than it being cold from a tupperware at work but thankfully it’s still very enjoyable this way!

ingredients serves 4-6
vegan cheese sauce:
2 cups potatoes, peeled and chopped *i used yukon gold*
2 cup carrots, peeled and chopped
1 can (15.5 ounce) great northern beans (aka white beans) rinsed and drained
3/4 cup unsweetened plain, unsweetened soy milk or water
5 tbsp nutritional yeast
1 tbsp lemon juice
1 tsp salt
1/2 tsp garlic powder
1/2 tsp onion powder
1 pound dried pasta, i used shell pasta but feel free to use gluten
free *reserve 1/2 cup hot pasta water*
2 tbsp vegan butter, optional but i highly recommend
2 tbsp nutritional yeast
1.boil or steam the potatoes and carrots in a large p*t for about 20 minutes or until soft.
2.in the meantime cook the pasta according to package directions.
3.meanwhile place all the vegan cheese ingredients in a blender (including the cooked potatoes and carrots) and blend until smooth. taste the sauce and adjust ingredients as needed.
4.once the pasta is cooked, carefully spoon out about 1/2 cup hot pasta water into a cup and set aside. then drain the pasta and return to pot. add the vegan cheese sauce to the cooked pasta noddles, mix to combine, if the sauce seems to thick, this is when you can add some of the hot pasta water to loosen up the sauce. * if you’re using gluten free noodles, skip the pasta water and instead use regular hot water.*
5.then add an additional 2 tablespoons of nutritional yeast, salt, pepper and 2 tbsp vegan butter (the vegan butter is optional) .
6.for leftovers… to reheat it, add a little bit of plant based milk & or vegan butter if the sauce is too thick.

pasta with tamari mushrooms
100g pasta of choice
1 clove garlic
1/2 medium onion, chopped
150g mushrooms, chopped
2 tbsp tamari
1/4 cup oat milk
1/2 tsp garlic salt
large handful spinach
boil the pasta according to packaging instructions. meanwhile, add the garlic, onion and mushrooms to a non-stick frying pan and sauté for around 5 minutes, until the mushrooms cook down. add the tamari, oat milk and garlic, lower the heat, and stir for a further 2-3 minutes before stirring in the spinach and the pasta. serve immediately.
